What pressure does this measure and what is the correct reading?

There’s not a “correct” value for pressure.

It is an atmospheric pressure reading. You can use it to validate your room pressurization if you’re running positive or negative pressure, and you can use it to adjust your CO2 supplementation based on your elevation.

So what percentage is equal?

Pressure is measured in Kilopascals (kPa). For reference, atmospheric pressure at sea level is typically 101.3 kPa.
